Whole Wheat Pancake Tower

After one bite, my husband stated, “This is really good, but it cannot be healthy.”  Well, well, I had good news for him.  Healthy and delicious…it skips over to the ‘keep me’ pile.  (Yes, there’s some Nutella and chocolate chips, but a little bit of chocolate never hurt anyone.)

Breakfast is by far my favorite meal.  It’s unfortunate that we really only get to unlock breakfast’s potential on the weekends.  Because of my love of this special mealtime, I thought it would be appropriate to be my first recipe.

2/3 cup whole wheat flour (or white flour)
1/2 cup quick cooking oats
1 tbsp Splenda (or white sugar)
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
3/4 cup skim milk (optional: add 1 tbsp of white vinegar to milk)
1 tsp vanilla extract
1/4 cup unsweetened applesauce (or 2 tbsp vegetable oil)
1 egg
1 tsp cinnamon (optional)
chocolate chips to taste
Nutella to taste
1 banana, sliced

Directions

 

 

 

  • Place flour, oats, sugar, baking powder & soda, salt, milk, vanilla, oil, egg & cinnamon in a food processor until smooth (or mix with blender).
  • Spray griddle with nonstick oil and heat to med-high.  Pour approximately 1/4 cup of batter onto griddle and sprinkle with chocolate chips.  Cook through and flip.
  • Layer pancake with a thin layer of Nutella and banana slices; repeat.
  • Serve with maple syrup or butter

 

 

The banana and Nutella layers are optional.  Pancakes can still be deliciously served without either.
