Whole Wheat Waffles

So I realized that my third recipe post is once again a carb.  I will eventually switch it up, I promise, but these just happen to be my frequent favorites.  I make these waffles all the time, so much that my husband doesn’t even eat them anymore (wait – that infers that they are not good…it’s just that I make them that often).  I use whatever flour I have on-hand (usually whole wheat), and, of course, I mix in chocolate chips.  They are an optional ingredient (but I wouldn’t recommend skipping them).  Sometimes I also mix in a pinch or two of flaxseed.

This will make 5 – 6 waffles, so I pop leftovers in the freezer and pull them out on the weekends.

2 cups whole wheat flour (or all-purpose white flour, whole grain white or mix)
2 Tbsp sugar
1 Tbsp baking powder
½ tsp salt
2 eggs
1 Tbsp vanilla
2 tsp cinnamon
1/2 cup unsweetened applesauce (or ¼ cup canola oil)
1 ½ cups milk
Chocolate chips & nuts to taste (optional)


  • Preheat waffle maker. Combine flour, salt, baking powder, sugar & cinnamon in a bowl; stir. In a separate bowl, combine eggs (slightly beaten), applesauce, vanilla & milk.
  • Whisk together all ingredients until smooth. Stir in chocolate chips, if desired.
  • Coat waffle grid with nonstick spray. Pour ½ cup or so of batter onto waffle iron and cook.

Enjoy now or freeze for later…
