Steamed Broccoli & Carrots with Ranch

Sometimes you just need a vegetable side dish that’s easy…this is one of mine.  Ranch is a standard dip choice for raw carrots & broccoli, so it makes sense that it works here, too.  Steam the veggies, toss with Ranch, sprinkle with Parmesan cheese & sunflower seeds & you’re all set.

You could steam the veggies however you like.  I use a 1.5 or 2 quart pot & give the broccoli a couple minutes of a head start before adding the carrots.  Start to finish is less than 10 minutes, especially if you buy shredded carrots.  Sunflower seeds can be omitted or substituted with sliced almonds or even cashews.

Maybe this one is too simple for posting, but I feel like it’s too easy & good not to share….enjoy!

Ingredients

1/4 cup water
1/4 tsp salt
3 – 4 cups fresh broccoli florets
1 cup shredded carrots
1/4 cup Light Ranch
2 tbsp grated Parmesan cheese, to taste
cracked black pepper, to taste
2 tbsp sunflower seeds, optional

Directions

  • In a small pot, bring 1/4 cup water & salt to boil.  Add broccoli, cover & steam for 3 min.
  • Add carrots & steam 2 more min or longer if preferred.  Remove from heat; pour out any remaining water.
  • Toss vegetables with Ranch.  Sprinkle with Parmesan, black pepper & sunflower seeds.  Serve warm.
