Blueberry & Peach Crisp

It turns out several of my favorite recipes are pretty seasonal, and I very much look forward to the changing seasons for this reason.  Right now is the time of the year for peaches & blueberries.  Here’s a blueberry & peach crisp recipe that’s pretty easy to put together & makes great use of these 2 fruits when in season.

This recipe is not a Laura original; it appears to be a standard crisp.  Standard or not, it is delicious & never lasts long.  It doesn’t make a whole lot either, so I would not plan to feed a large crowd (or maybe that’s just the case at my house).  I have had intentions to test out whole wheat flour & add in some oats.  I just have never wanted to mess with it as is, but I’m sure they would be great substitutes.

Naturally, this is best served warm & with a side of vanilla ice cream.  Enjoy fast, before the next season…

Ingredients

1/4 cup white sugar
3 tbsp cornstarch
1/4 tsp salt
1 pint blueberries
4 – 5 medium peaches, pitted & sliced

Topping:

2/3 cup flour
1/2 cup brown sugar
1/2 tsp cinnamon
4 tbsp butter
2/3 cup chopped pecans

Directions

  • Preheat oven to 375 degrees.  Grease 9″ baking pan with non-stick spray.
  • In a medium bowl, combine sugar, cornstarch & salt.  Toss in fruit & spread evenly into baking pan.
  • Make the topping in another bowl.  Combine flour, brown sugar & cinnamon.  Mix in the butter using a pastry cutter (or your fingers).  Toss in the pecans.  Sprinkle topping over the fruit.
  • Bake 35 – 40 minutes or until bubbly & brown.  Serve warm.

    Sound easy–looks real good–I am going to try this one. I always make peach cobbler and this sounds good to me. Thanks Laura
