Skillet Lasagna

Everyone loves lasagna; it makes its way onto more dinner tables this time of the year.  It’s just that it takes so much effort to make, and maybe that adds to its appeal.  But, we would all love to enjoy lasagna more often, especially if it were easier to make & just a tad bit healthier for you.  So, here’s my attempt…

The total time of this skillet lasagna is about 45 min, which is less than half of traditional lasagna.  It’s one pot cooking, another bonus.  And because the cheese it layered on top, you can use less of it without sacrificing the cheesy taste.  I use ground turkey in my lasagna, but you can sub ground beef or Italian sausage, & I prefer cottage cheese over ricotta.  Use any flavor of pasta sauce & diced tomatoes (fire-roasted, Italian-style or traditional) as well as any combo of Italian cheeses (shredded mozzarella, grated Parmesan, etc)…whatever is in your fridge.  Finally, it’s easy to leave out the spinach (I have made with & without).

The trick is to add 1 1/2 cups of water (& maybe more)…the lasagna will cook in the sauce, & the water will simmer away.  Once the pasta is cooked through, make little pockets & spoon in cottage cheese.  Sprinkle with Italian cheese, to taste.  And enjoy.


1 lb ground turkey
1 onion, chopped
2-3 cloves garlic, minced
1 jar pasta sauce
1 can diced tomatoes
1 1/2 cups water
10oz chopped frozen spinach, thawed
9 – 10 lasagna strips, broken into 1″ pieces
1 tsp Italian seasoning
crushed red pepper, to taste
1 tbsp tomato paste
1 cup cottage cheese
1 cup Parmesan or Italian cheese blend


  • Cook ground turkey & onion in a large skillet (not wok) over medium-high heat until meat is cooked through & onion is soft.  Add garlic & cook 1 min more.
  • Add pasta sauce, diced tomatoes, water, spinach, broken lasagna, seasonings & tomato paste.  Stir, cover & bring to a simmer.  Maintain simmer over medium-low heat for 20 min, stirring occasionally, or until lasagna is cooked.
  • Dollop cottage cheese on top & sprinkle with cheese.  Simmer 2 minutes more & then serve.
