French Toast Casserole

Most “professionals” say breakfast is the most important meal of the day.  It should be nutritious; including items like fresh fruit, whole grain carbs such as oatmeal & healthy proteins like egg whites.  Filling, balanced, to really jumpstart your day.  Of course.

This is why my breakfast is usually includes these types of foods.  Usually.

There’s this thing called french toast.  Have you heard of it?  It falls in the same craving section as cinnamon rolls & must be satisfied every once in awhile.  Often, I will make french toast with whole grain bread & it serves as a healthy, filling breakfast.  But, this casserole recipe comes to mind when serving a larger crowd.  Or just 5 people like it did today (we were hungry).  It can be made the night before & uses only a few ingredients.

It is important to use Challah bread.  Thick & soft, challah bread seems to be the traditional bread for french toast (some grocery stores don’t carry it; Trader Joe’s sells it) & it really makes the dish.

Really, when compared to other french toast casseroles, this one is better-for-you.  No heavy cream, less than a stick of butter, easy on the sugar…not that you couldn’t add or substitute these ingredients for a more decadent treat.  But, I think you will like it just as it is.


6 tbsp butter, melted
3/4 cup brown sugar
1 loaf Challah bread, sliced into 1 1/2″ pieces (I use about 2/3 loaf)
4 large eggs
1 1/2 cups milk (I use skim)
1 tsp vanilla
1 tsp cinnamon
Powdered sugar for sprinkling

  • Add brown sugar to melted butter; stir until blended.  Spread evenly on bottom of 9 x 13 pan.  Layer challah bread slices evenly in pan.  (You may need to break up a slice to fill in the gaps between slices.)
  • Beat eggs, milk, vanilla & cinnamon in a separate bowl.  Pour on top of bread.
  • Cover & refrigerate 8 hours or overnight.
  • Remove pan from refrigerator.  Preheat oven to 350.  Bake for 45 minutes or until eggs are set & bread is lightly brown.  Sprinkle with powdered sugar.
  • Serve with maple syrup, if desired.
