Pizza Egg Casserole

I’m sure if I looked it up, pizza has household penetration of over 90%.  Most American households probably eat it 1x/week.  When my husband “makes dinner,” the menu consists of a frozen pizza.  So, due to the popularity of pizza, I’ve tried to recreate pizza flavors in other dishes, such as soup & breakfast recipes.  Which leads me to this egg casserole pizza recipe.

Yum.  But maybe we just like pizza.  And sauces.  Either way, we have a unique egg casserole recipe here that is fun to eat & pretty tasty.  As I usually do, I use turkey sausage & lots of spices.  The mini pepperoni slices are perfect, but I’ve already confessed my love for mini things, so regular pepperoni, sliced, would work, too (& really they are optional so you can leave them out altogether).  My next experiment will be with these same ingredients in a stromboli…yum.

We love our sauces at my house, so serving this with pizza sauce just adds the finishing touch.  Although most pizzas for breakfast are served cold & as leftovers, I think you will really like this twist….


1 lb Italian turkey sausage
1 onion, diced
1 green pepper, diced
2 – 3 cloves garlic, minced
1/2 tsp each fennel seeds, oregano & crushed red pepper, or sub Italian/pizza spice blend
1 tbsp tomato paste
5 large eggs + 3 egg whites
1 1/2 cups skim milk
1/2 loaf Italian bread, chopped or torn into 1″ cubes
1/2 cup mini pepperoni
1 cup Italian cheese blend
chopped fresh parsley, to taste
prepared pizza sauce, to taste


  • In a large skillet cook turkey sausage, onion & green pepper over medium heat until meat is no longer pink & vegetables are tender.  Add garlic, seasonings & tomato paste; cook a couple minutes more.
  • Meanwhile, grease 9×13 pan with nonstick cooking spray.  Distribute bread in 1 layer in the pan.
  • Whisk eggs & milk in a bowl.  Stir in pepperoni, if using.
  • Layer meat & vegetables evenly over bread.  Pour egg mixture on top.  Layer with cheese & parsley.  Cover with plastic wrap & refrigerate 8 hours or overnight.
  • Remove casserole from oven 30 – 45 min before baking.  Preheat oven 350 degrees.  Bake 50 – 55 min or until cooked through.  Serve with pizza sauce.
