Buffalo Chicken Pizza

Pizza.  Add it to the name of your recipe & it’s sure to catch some attention & interest. Or at least it does for me.  You’ll find a few pizza recipes on my blog already.

This buffalo chicken pizza has quickly become a staple on my recipe list because it is so easy & delicious.  So many people love that buffalo chicken dip (a classic), so why not take buffalo sauce to another popular dish, pizza?  It seems like an obvious match.

I think this is great because it can be served as an appetizer or as part of a main meal.  It follows the same “sauce” recipe as my vegetable pizza…easy.  And I have used crescent rolls & pizza dough as the crust…both work great.  The carrots & celery add the perfect crunch, too.

I’ve used blue cheese & mozzarella cheese as a topping, so use whichever you prefer.  For the dressing, I prefer Ranch over Blue cheese, but the latter may be a more obvious choice for some of you.  You can even have the dressing as a side as opposed to a drizzling on top.  Or use shredded chicken instead of diced.  So many options here, all delicious.

Ingredients

1 refrigerated pizza crust
1/2 cup + 1 tbsp buffalo sauce
8oz reduced-fat cream cheese
1 cup sour cream
1 tbsp dry Ranch seasoning
1 1/4 lbs cooked chicken, cubed
2/3 cup carrots, diced
2/3 cup celery, diced
mozzarella cheese, to taste
Ranch dressing, to taste

Directions

  • Unroll pizza crust.  With pastry brush, spread 1 tbsp of buffalo sauce over uncooked crust.  Bake in preheated oven according to package directions.  Set aside & cool.
  • Meanwhile, combine sour cream, cream cheese & Ranch seasoning.  Mix on medium until combined, about 1-2 min.  Spread over pizza crust.  (Note: this makes a lot, so you may choose not to use all of it on the pizza…save as a dip!)
  • Toss chicken in remaining buffalo sauce.  Evenly distribute chicken & vegetables on top of pizza. Sprinkle with mozzarella cheese & Ranch dressing.  Keep refrigerated until serving.
