Frozen (Banana) Yogurt

August 5, 2012

Summer, I’m about done with you.  I know I will regret that statement in about 6 months, but it’s time for some relief.  It’s too hot to go on walks (i.e. too hot for walks with a 7 month old), which means Orange Leaf has been missing some major business.  But we’ve discussed this already.

My frozen yogurt alternative is this recipe.  I saw this recipe when watching the food network one morning.  I didn’t believe that it tasted just like frozen yogurt…well, it’s pretty close.  Bananas in smoothies is not a new concept to me, but frozen bananas for yogurt is.  It takes awhile to blend the bananas (see picture below – it will look like this until it is well-blended) & you probably need a strong blender, but it really makes a great dessert with few additions.  And then there’s the obvious extra step of freezing the bananas in advance, but focus on the fact that you need only a couple ingredients for this tasty, healthy dessert.

I’ve incorporated peanut butter and/or Nutella, and I think you could easily try it with fresh fruit puree.  The amount of honey is optional, depending on the ripeness of your bananas.  Riper bananas are sweeter & will provide a better flavor (but less ripe bananas are technically better for you because they have more resistance starch).

You could say I’ve been lazy about uploading my food pictures.  But, I prefer to more positively describe this as interest in the various camera iPhone apps.  I love experimenting with the borders, tints, etc. of the apps, so you may be seeing more of these photos in the near future, FYI.  Until this phase ends, of course.

5 medium bananas
1/3 cup peanut butter &/OR Nutella, to taste
2 tbsp honey (depending on the ripeness of bananas)
Caramel or chocolate sauce topping, to taste, optional

  • Peel bananas; chop into 1″ pieces.  Place bananas in ziploc bag & freeze at least 2 hours.
  • Put frozen bananas in blender or food processor and puree, scraping down sides, until smooth. Add the peanut butter &/OR Nutella & honey; puree. Add toppings (optional) to serve 2 & enjoy!
