Avocado Hummus Toast

The avocado trend train left a couple years ago & I’ve finally jumped on it.  A super fruit that everyone know has the “good fats” that happens to also be very tasty.

Avocados are tricky fellows…the window for ripeness is usually small, which tends to end in disappointment because they aren’t exactly cheap.  That is why we often buy them from Costco so each of us has to eat 2 per day before they go bad.  Totally common sense.

The delightfulness of my home office allows me to make simple open-faced sandwiches as such for lunch, yum.

These are so easy, healthy & require no explanation, really.  I’ve been addicted to them, which means I need to share the idea.  The simple goodness begins with toasting the bread (preferably whole grain), spreading the toast with hummus, layering slices of avocado on top & finishing with a sprinkle of kosher salt, garlic powder & cayenne pepper.

If I were having a party, I’m pretty sure one of my aps would be this twist to the recipe: hummus, smoked gouda, deli turkey meat & avocado seasoned on top of a multigrain cracker.  More yum.

Ingredients

2 pieces of whole grain bread
2 tbsp hummus, such as Roasted Garlic Hummus
1/2 avocado, sliced
Kosher salt, garlic powder, cayenne pepper, to taste

Directions

  • Lightly toast bread.  Spread 1 tbsp on each piece of toast.  Layer slices of avocado on top of bread.  Season, to taste.

Lunch for 1!
