Peanut Butter Skillet Cookie

Happy Valentine’s Day! Let’s eat chocolate!

Even better, chocolate + peanut butter, in giant cookie form. I ❤️ this.

This is just tweaked from my chocolate chip skillet recipe.  Enhanced, you could say.

My husband & I ate a whole cookie in < than 2 days. 36 hours to be exact.  We kind-of-sort-of like it.

Add heart-shaped Reece’s to make it truly the perfect Valentine treat.

Besides eating chocolate, what are you doing on this most “romantic” day of the year? I plan to be in my pjs in bed by 9, 8:30 if I’m lucky. Not eating this skillet because it’s all gone. Wah, Wah.

Happy Valentine’s Day, everyone! Now, time for spring to hurry its way here…

Ingredients

1 stick butter
1/3 cup creamy or crunchy peanut butter (I’ve used both!)
1/2 cup granulated sugar
1/2 cup brown sugar, lightly packed
1 egg
1 tsp vanilla extract
1 1/2 cups all-purpose flour
1/2 tsp baking soda
pinch of salt
pinch of cinnamon, optional & to taste
2/3 cup chocolate chips, or to taste
1/3 cup mini peanut butter cups

Directions

  • Preheat oven to 350 degrees.  Melt butter & peanut butter in 10″ cast iron skillet (or other oven-proof pan) over low heat.  Remove from heat & rest for a couple minutes (you don’t want the pan to be too hot when you add the egg).
  • Stir in sugars with a fork.  Beat in egg & mix well.  Stir in vanilla.
  • Place flour, baking soda, salt & cinnamon (if using) into skillet.  (You can mix this in a separate bowl, if desired.)  Carefully stir dry ingredients into wet, adding chocolate chips & peanut butter cups once it begins to look like dough. Make sure dough is evenly spread across skillet (this step will take a few minutes).
  • Bake 18-25min, or until cookie is golden on top & cooked through.  (Baking time can vary – it took 22min in my oven.  It may take more or less time depending on your pan size, too.)

    Yum- Tyler is asking me ” when can you make this mom?” Needless to say I am not a master baker but can try…miss you all and can’t wait to hug the boys in the coming months.
